Mom used to cook this very frequently ...All of our family members loved it..I even remember if I felt lazy to wake up in the morning and mom said that there was Bilahi aru koni Bhaji in the breakfast I would wake up within seconds 🙂 ..This is a simple Assamese dish which is very easy to cook. Ingredients
- 4-5 Nos Tomatotes
- 1 No onion (large)
- 2 cloves garlic crushed
- small piece of ginger crushed
- 2 tbsp mustard oil
- 2 nos Egg
- 1/4 tsp turmeric powder
- Fresh coriander leaves
- salt to taste

Instructions
- Chop tomatoes and onion.
- Crush garlic and ginger.
- Heat oil in a pan.Add onions and stir for few seconds
- Add crushed Ginger-garlic and stir again.
- Once onions are translucent ,add chopped tomatoes, turmeric and salt. Stir well
- Saute the tomatoes. You can now cover and cook the tomatoes.
- When the tomatoes have softened and cooked well ,add the eggs and mix well (You can break the egg directly in the pan itself without using another bowl).
- After one minute switch off the gas stove
- Take out the bhaji in a glass bowl.
- Garnish with fresh coriander leaves and serve with rice.
